I promised the recipe for chocolate frosting. I even like it and as I've said, chocolate is not #1 on my list. I use this for my 4 layer cake and also my cupcakes. It's easy and quick.
This recipe will frost a 4 layer cake or 45-50 cupcakes.
you'll need:
1 cup of Butter
1 1/3 cups of unsweatened Cocoa Powder (Hersheys is more expensive but the best)
Confectioners Sugar (about 8 cups)
1 cup of milk
1/4 tsp of Espresso Coffee powder
1 tbs Vanilla
Melt the butter slowly and then add the cocoa powder
Turn off the heat and while cooling add the espresso
Pour the chocolate into a bowl and when cooled gradually add the confectioners sugar and milk to give you the consistancy you like.
Add the vanilla
That's it! The coffee gives it that little bit of something extra.

I use a very similar recipe without the coffee powder and it's delicious. I am going to try this as I bet it makes it even better!
