Mini Apple Pie Crumb Cupcakes It's Fall Baking Time!

So my last post was in July & it's not like I was on vacation.  Each time I made something, I took a picture with full intentions of writing about it.  What happened?  This summer started off with a gigantic family reunion and a celebration of a 90th birthday.  Then there were other birthdays, anniversaries, announcements of new babies & taking care of a two year old and a one year old! My online business http//welldressedcupcakes.etsy.com has been wonderful with orders every day. All good things happening here but there was just no time to write.  A huge effort will be made to  get back on track at least a little bit. 

Autumn is my favorite time for recipes.  Someone recently mentioned apple pie and how I only bake them for Thanksgiving.  This gave me my recipe for this week.  Apple Pie Cupcakes - hmmmm - not too sweet with crispy macintosh apples from the farm market, brown sugar, cinnamon, apple pie spices and a nutty crumb topping. A nice change from frostings and they smelled delicious while baking!  As I have mentioned before, chocolate rules in my house.  The disappointment was unbelievable when they found out it was not something with chocolate.  I tasted and loved these little minis but will have to wait till tomorrow when they are sent to the store for other opinions.  I posted these on my Well Dressed Cupcakes Facebook page and had lots of positive comments.  If I could just have virtual tasters!

The only change I will make next time is to use butter instead of oil.  It's just something I prefer. I used walnuts for the topping but pecans would be great too.  Another addition might be to drizzle some melted caramel on top.  But for now try this lovely autumn recipe.  I think you'll like it.



Apple Pie Crumb Mini Cupcakes

1 cup of flour
1 tsp cinnamon
1 tsp baking soda
1/2tsp salt
1/2 tsp nutmeg
pinch of cloves
1 cup of sugar
1 egg
1/4 cup of oil
2 cups of peeled finely diced apples

Crumb Topping
1/2 cup of flour
3 tbs of softened butter
1/3 cup of dark brown sugar
1/4 cup of chopped walnuts
1/2 tsp of cinnamon


In a small bowl, combine flour, cinnamon, cloves, salt and baking soda
In another bowl mix the oil, egg and sugar together and then add the apples
Add the dry mixture to the oli, eggs etc and combine well but don't overmix.
Line a mini muffin pan and fill a little more than half.  Add the crumb topping to each and bake for about 25 minutes at 350.  Make sure to remove them from the cupcake pan as they tend to stick if cooled for too long.
This makes about 30 mini cupcakes

  2. I love the idea of apple cupcakes. Apple pie on it's own is one of my favourites so a cupcake version is bound to taste great.

  3. It sure is the season for baking. Love the smell of apples and cinnamon or fresh bread baking away.
