Devils Food Cupcakes with Abby's Favorite Chocolate Fudge Frosting

I missed last week's baking & blog posting as I was taking care of my goldie, Abby and I have the sad news that I've lost my best friend.  She was such a good dog and just loved everyone & everything.  Abby's likes and dislikes include  the neighbors & their kids, ( loved to bark at them) loved the mailman as he always left a cookie in the mailbox for her ( a giant one) loved stealing food off the table when no one was watching and always was there to great us when we came home.  She also had a love/hate relationship with her sister Stella. (a yorkie who tried to boss her around)  Abby loved my cupcakes and unfortunately for me she always managed to grab one. She would gladly have volunteered to test every flavor I had ever made.
I learned the hard way to place finished goods very high up away from her reach.  I came home one day to a near disaster - she had opened the cabinet and taken out a box of cocoa powder whcih was sealed.  I used this to make a delicious chocolate fudge frosting.  Cocoa Powder was everywhere.  Luckily I must of come home as soon as she had done this so everything was ok & she had not really had a chance to taste it.   After a frantic call to the vet,  I now place it on the top shelf and put a door lock on the cabinet!

So I dedicate this post to my best friend who I miss so much and will look for every time I come home.  I will miss  that little face peering out the side window.  I will still place my cupcakes on the top shelf out of sheer habit and think of her with the hopeful face waiting for one to fall.

So "Here's to you my friend Abby" - I hope you are now happily running, playing and having a cupcake whenever you want.


Abby's Chocolate Fudge Frosting (recipe is for one cup)  I triple it for a 4 layer cake
Butter - 3 tbs  (never use margarine)
Unsweetened Cocoa (Hershey's is the best)  1/2 cup - this gives you a nice dark flavor
Powdered sugar 1 1/3 cups
Milk (only use whole) 2 - 3 tbs
Vanilla 1/2 tsp
Espresso Coffee (using instant coffee, mix water and coffee, make it strong)  1/2 tsp  This is optional but I love this flavor

Melt butter over medium heat.  Add Cocoa and stir constantly.  Let cool completely.  Add powdered sugar alternately with milk, blend in vanilla and coffee

  1. I can relate, had to have my golden "madison" put down last July and not a day goes by that I don't think of her. They are a special breed of dog. Andi
