I think it found me. I wasn't really looking for it. I was shopping with my daughter in Anthropologie. We were looking at clothes but it found me. It was on a cute little blue table so I sat down on one of those comfortable chairs they have and next thing I know I was in line with ANOTHER BAKING BOOK! I had to get it and tonight I am using several of the recipes. The vanilla cupcakes are the best I have ever had and right now a vanilla cake is in the oven and looks delicious. Frosting recipes look great. I'm trying the Mocha, the Strawberry Buttercream & the Lemon. Next I am baking the Strawberry Cupcakes & that is the recipe I will share with you today. Please don't think I am going wild baking every kind of cupcake. I am baking 200 cupcakes for a wedding tomorrow & the bride wants all flavors. So much fun to do.
The baking book I am so excited about is called "Cupcakes from the Primrose Bakery" by Martha Swift & Lisa Thomas. They are located in London. Recipes are great and the pictures are the best. Definitely a worthwhile buy. Strawberry & Cream Cupcakes
15 regular cupcakes
1 c + 2 tbs sugar
1 1/3 c selfrising flour, sifted
1 tsp baking powder
3 tbs cornstarch
1/2 c coarsley pureed ripe strawberries
1 c butter (unsalted) room temp
4 large eggs (not cold!)
preheat to 350
Put sugar, flour, baking powder, cornstarch & pureed strawberries in a food processor. Pulse until evenly mixed (roughly 4 sec) add butter & eggs (10 sec)
Line the pan with cupcake liners and spoon into each about 2/3 full.
Bake for about 25 min.
Cupcake will be fairly moist.
