Girl Scout Thin Mint Cupcake Time of Year!

It's that time of year. The Girl Scouts are out and about again. It's impossible to say no to the little girl at my door and also the girls at the food store with boxes of cookies to sell. As I wrote in last year's post, I still remember all the boxes piled up in my house and how my mom was such a big help! Since last years Thin Mint Cupcakes were pretty popular, I decided to make them again especially since we had now acquired 3 boxes of Thin Mint Cookies. I changed the recipe just a bit and I'm happy with the results. I'll only list the changes I made to last year's recipe. In a blender, grind up a sleeve of Thin Mints into a very fine crumb. Once you've made your chocolate cake batter (see past recipe)fill up each baking cup half full and add a layer of crumbs, add more cake batter to your cupcake liner and add another layer of crumbs. It gives the cupcake just enough mint flavor without being overpowering as compared to using the bottled pure mint extract.
I used a plain vanilla frosting (see Magnolia Vanilla Recipe) and then just sprinkled additional mint crumbs on top. Add a piece of a thin mint and you're done. I am much happier with the plain vanilla frosting with the flavor of the actual cookies added to it. So buy some Girl Scout Cookies, it's a great cause and your cupcakes will taste delicious!
