Cupcakes Pupcakes
Don't these look delicious? They are healthy, nutritious and cute to look at but they are not for you! These little cakes are heading out to a friend's New Baby, I mean New Puppy Shower. She is very involved with an organization called Kindred Souls. These dogs, all shapes and sizes bring happiness wherever they go. Nursing homes, hospitals, rehab centers, library programs - they do it all. So a new puppy is arriving and my friend is now in the business of arranging Puppy Showers. I have made dog biscuits but never "pupcakes" There are lots of recipes out there and I'll try a few more but here is today's "Pupcake"! I made a few changes to the recipe I found online so here goes:
Carrot Cake Cupcakes with Cream Cheese Frosting
Ingredients
Pupcakes
2 cups of shredded carrots
3 eggs
1/2 cup of unsweetened applesauce
2 tsp of cinnamon
1/2 cup of rolled oats
3 cups of whole wheat flour
Frosting
8 oz of lowfat cream cheese
1/4 cup of applesauce
extra fine shredded carrots (for color)
Preheat oven to 350
Combine carrots, eggs and applesauce
Sift together the dry ingredients
Gradually add the dry ingredients to the carrot mixture.
I felt it was too dry so I added additional applesauce.
Fill mini muffin tins (uses liners)to the top (the cakes do not rise that much)
Bake for about 20 - 25 min. Mine were done in about 20. Test for doneness.
While the pupcakes are cooling combine cream cheese, applesauce and finely ground carrots (about 2 tbs) for a pale orange color. Combine at high speed till light and fluffy.
Using a pastry bag, pipe onto pupcakes.
