#1 Chocolate Chip Mint Cupcakes

A busy week and all of a sudden it's Thursday. No thoughts beforehand of what I would bake for tomorrow's order. So now random thoughts begin which can be good or bad. I started thinking about ice cream flavors, then jumped to a request from the store I bake for to make "green things" as St. Pat's Day is coming. Out of that came chocolate chip mint cupcakes. I had mint extract, had mini chocolate chips. I was good to go. so here comes the advice.
Only buy pure extracts. More expensive but worth it. The artificial flavors are just bad. Do not think that you can just sub 2 tsp of mint extract for the usual vanilla. The mint is STRONG! I used 1/2 tsp and that batch went right in the garbage. So I used about 1/8 tsp. Almost forgot - tint with green food coloring. I like Wiltons Colors the best. Just a drop is plenty.
Mint ButterCream
6-8 c powdered sugar (I used 6)
2 sticks unsalted butter softenend
1/2 cup milk
1/8 tsp of pure mint extract.
Beat 2 sticks of butter, 4 cups of Powdered Sugar and 1/2 cup of milk for 4 minutes. Gradually add additional sugar and extract.
This has to go on chocolate cupcakes. I made a darker version and will post later. Ice and add mini chocolate chips. Delicious. Should we add some ice cream?

  2. I'll have to give these a try. I have had plenty of experience with mint extract already some quite hilarious but I have learned to use sparingly. :)
