The BEST Irish Soda Bread Recipe

I know it's March 18th & St Pat's Day is over but I did promise to write the recipe.  This bread is great for breakfast, a snack or St. Pat's dinner. See picture from last post.

3 1/2  cups flour
2 Tbs Baking Powder
1 Tsp Salt
2/3 cup Sugar
1 tsp baking soda
1 tsp caraway seed (optional)                                                                          
1 1/2 cups dark seedless raising
2 Tbs Melted Butter
2 eggs beaten
1 3/4 - 2 cups Buttermilk

Sift flour, sugar, Baking powder, baking soda, salt, seeds in a bowl.  Add raisins.
Combine eggs, butter & milk.  Add this to dry ingredients and mix together just until flour is moistened.  (do not overmix).  Turn batter out onto lightly floured board and knead gently to form a round shape. Cut dough into 2 round shapes.  Turn smooth side up & place on lightly greased baking sheet. Cut a cross on top.\Bake at 350 for 35-40 minutes.  Cool on rack.
