Summer is Here - Blueberries!

One 4 layer chocolate cake - done
One pan of rasberry shortbread bars - done
One pan of chocolate chip shortbread bars - done
2 dozen mini devil's food cupcakes - done



So here comes my dilemma - what can I bake? & write about that's new? As I write this I'm getting out my new cookbook, "Cupcakes from the Primrose Bakery" I have lots of fresh blueberries in my refrigerator so "Blueberry & Cornmeal Cupcakes" has caught my attention. They describe it as "somewhere between and cupcake and a muffin" I think I'll try it. Here goes:
*8 tbs unslated butter at room temp
*2/3 cup of dermerara sugar (ok I have to go look this up, I'm not going to pretend I know what it is!) so... it's as follows: "Light brown sugar crystals that originated from Demerara, Guyana. This is a form of raw sugar. Several countries produce this form of sugar now including India and Jamaica"
So that's not happening tonight but I will check to see if it's in the store next shopping trip. So now I'm searching for a substitute. Here goes: Light Brown Sugar. There are other suggestions but this seems easiest. If you have one, let me know.
1/2 c light brown sugar
2 large eggs
1 cup plus 3 tbs of all-purpose flour
1 scant c yellow cornmeal
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 cup of buttermilk (ok I have recommend this for emergiencies - keep the dried buttermilk powder handy, Saco Cultured Buttermilk. Just make sure to refrigerate after using)
1 cup blueberries (I'll add more as I love blueberries)
confectioners sugar for dusting

Preheat oven to 350
Cream butter & sugar till pale and smooth
Add eggs one at a time
Sift flour, cornmea;,baking powder and salt in a seperate bowl
Add half the buttermilk and mix till just combined.
Repeat these steps till all have been added.
Fold in blueberries

Spoon batter into liners 2/3 full
Bake for about 25 min till golden brown
Dust when cool with powdered sugar and fresh blueberries.
