Oreo Cupcakes with Oreo Frosting
A friend who recently visited London and made a stop at the Primrose Bakery. She loved it! I happen to have one of their cookbooks. "Cupcakes from the Primrose Bakery" & thought I'd use one of the recipes. I picked "White Amaretto Cupcakes but I did change it a bit as I wanted to use Oreos in the recipe. I made a base of crushed oreos at the bottom of each cake. The result was delicious & a nice surprise! I made a crushed oreo frosting that was just perfect with a little bit of crunch in each bite.
Here's the recipe White Amaretto Cupcakes
8 tbs unsalted butter at room temp
3/4 c plus 2 tbs sugar
2 large eggs at room temp
3/4 c plus 2 tbs self rising flour
3/4 c plus 1 tbs all-purpose flour
1/2 c 2% milk at room temp
1/2 tsp of vanilla (the recipe calls for amaretto liquer which I do not have)
6 Finely Crushed Oreos (my change)
Preheat oven to 350 and line a 12 cup muffin pan
Add a spoonful of oreo crumbs to each liner.
Cream the butter and sugar until mixture is pale and smooth (about 3-5 min)
Add the eggs one at a time
Sift the 2 flours together in another bowl. Mix the milk and vanilla together.
Add 1/3 of the flour mixture to the creamed mix and beat well. Pour 1/3 of the milk into the mixture and beat again. Repeat these steps untill all ingredients have been added.
Spoon the mixture into liners about 2/3 full and bake in the oven for about 25 min until slightly raised and golden. The directions say to insert a skewer in the center of one to check for doneness. I don't have skewers, I just use a piece of spagetti and it works perfectly.
This recipe uses Amaretto Buttercream with toasted slivered almonds which sounds delicious but I used the oreos & vanilla which will appeal to all chocolate lovers!
I will give you their recipe first for the Amaretto Buttercream
Amaretto Buttercream Frosting In a large mixing bowl beat 8 tbs of unsalted butter at room temp, 1/4 c of 2% milk and 1 tsp vanilla extract and 2 1/2 cups of powdered sugar until smooth. Gradually add the remainder of the sugar to produce a buttercream that has a smooth consistency. Add the Amaretto (if you want to) and beat well.
For the Oreo Frosting, Leave out the Amaretto and crush 3 whole oreos to fine crumbs and add these to the frosting. You will love the taste. I must say you have to frost by hand or use a tip that has a large opening as the crumbs will get stuck in the decorating tips. Cut oreos in half to finish off your cupcakes.
I like to do this - find a recipe and substitute just to make it a little bit mine!
The cupcakes themselves were light and tasted delicious. I will definitely use this recipe again.
The pictures in this cookbook are beautiful so if you're looking for a new cupcake book - buy this. Definitely worth it. They also have some beautiful cakes which I will give a try. We have a family birthday coming up and they have a Chocolate Layer Cake that needs to be made!
